Fresh Roasted Vegetable Salad Garden

Fresh zucchini and squash roasted with tomatoes and red onion
tossed with a white vinaigrette dressing
.

 

Forage Quinoa Salad

Shredded kale and carrots with dried cranberries and mandarin orange segments
tossed with red and white quinoa in an orange cream vinaigrette dressing.
Topped with shredded toasted coconut.

 

Entre

Chicken Marsala

Boneless, skinless chicken thighs sautéed with sliced seasonal mushrooms,
diced Vidalia onions prepared in a rich Marsala wine sauce.

 

Smoked Pork Tender Loin

Tender pork loin prepared with a dry rubbed and smoked to perfection.
Sliced to serve.

 

Beef Striploin

Beef striploin, herb encrusted and roasted to “Medium”
Sliced to serve.

 

Les Cotes “Sides”

“Dirty Rice”

Prepared in the traditional creole fashion; white rice mixed with Cajun spices,
beef, bell peppers, celery, and onions.

 

Jambalaya

A wonderful Cajun specialty; Cajun spiced rice with tomato, chicken,
Andouille sausage, shrimp, peppers onion, and celery.

 

Dessert

Banana bread pudding

Custard like soufflé served warm with
banana chunks and a delicious spiced rum sauce.

 

Beignets

Fried bread “pillows” dusted with
powdered sugar and cinnamon sugar.
